Description

Chocolate and pecans combine to make one insanely rich and delicious pie!


Ingredients

Scale
  • One 9-inch unbaked pie crust (I used pre-made frozen crust but you can certainly make your own)
  • 6 oz semi-sweet chocolate chips
  • 1 1/2 cups pecan pieces, chopped and toasted*
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup light corn syrup
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 teaspoon pure vanilla extract
  • to toast pecans, bake them at 350 degrees F for 10-15 minutes, or until they become fragrant.

Instructions

  1. Preheat oven to 325 degrees F.
  2. Bake crust in preheated oven for 10 minutes. Remove from oven and let cool.
  3. Reduce oven temperature to 300 degrees F.
  4. Once crust is cooled, line the bottom of the crust with chocolate chips.
  5. Place the pecan pieces on top of the chocolate chips.
  6. In a medium bowl, whisk together the melted butter, corn syrup, brown sugar, eggs, and vanilla until well combined.
  7. Pour mixture over pecans and chocolate chips.
  8. Place pie on a cookie sheet and bake in preheated oven for 50-55 minutes, until the pie is set but slightly soft like gelatin.
  9. Check after 45 minutes to make sure crust is not getting too brown. If it is, line the crust with a thin strip of aluminum foil. (I did not have to do this but it’s important to check!)
  10. Let cool completely, at least 4 hours.
