Description

Rich and creamy chocolate pudding, made with soaked cashews for a naturally decadent treat. Perfect for a simple dessert or a sophisticated after-dinner indulgence.


Ingredients

  • 1.5 cups (355 ml) soaked cashews
  • 3 tbsp cocoa or 3 tbsp melted dark chocolate
  • 3 tbsp brown sugar
  • 0.25 tsp cinnamon
  • Sprinkle of salt
  • 1 tsp vanilla
  • 0.33 cups (80 ml) almond milk

Instructions

  1. Add the cashews and almond milk to a blender or food processor and blend until smooth and creamy. Scrape down the sides as needed.
  2. Add the cocoa/chocolate, brown sugar, cinnamon, salt, and vanilla and blend until well incorporated.
  3. Chill for at least one hour.

Notes

  • For a richer chocolate flavor, use dark chocolate instead of cocoa powder.
  • If the pudding is too thick, add more almond milk, 1 tablespoon at a time, until desired consistency is reached.
  • Store leftover pudding in an airtight container in the refrigerator for up to 3 days.
