Description
Rich and creamy chocolate pudding, made with soaked cashews for a naturally decadent treat. Perfect for a simple dessert or a sophisticated after-dinner indulgence.

- 1.5 cups (355 ml) soaked cashews
- 3 tbsp cocoa or 3 tbsp melted dark chocolate
- 3 tbsp brown sugar
- 0.25 tsp cinnamon
- Sprinkle of salt
- 1 tsp vanilla
- 0.33 cups (80 ml) almond milk
Instructions
- Add the cashews and almond milk to a blender or food processor and blend until smooth and creamy. Scrape down the sides as needed.
- Add the cocoa/chocolate, brown sugar, cinnamon, salt, and vanilla and blend until well incorporated.
- Chill for at least one hour.
Notes
- For a richer chocolate flavor, use dark chocolate instead of cocoa powder.
- If the pudding is too thick, add more almond milk, 1 tablespoon at a time, until desired consistency is reached.
- Store leftover pudding in an airtight container in the refrigerator for up to 3 days.
