Rich, decadent chocolate mousse? Made with avocados! This surprisingly simple dessert is a crowd-pleaser.

- 0.75 cups (177 ml) full fat coconut milk
- 2 avocados
- 7 oz (198 g) high quality chocolate
- 1 capfull vanilla
Instructions
- Peel two avocados and puree them in a food processor.
- Add 3/4 cup of full-fat coconut milk.
- Pour the smooth, creamy puree into a large bowl.
- Melt the chocolate in a double boiler.
- Add the melted chocolate to the avocado coconut puree.
- Mix well until thoroughly blended.
- Add a capful of vanilla and stir well.
- Taste and add more sugar if needed.
- Pour the mousse into individual serving dishes and chill in the refrigerator for a couple of hours until firm.
- Serve.
Notes
- For a richer flavor, use dark chocolate with a high percentage of cacao.
- If your avocados are not ripe, you can speed up the ripening process by placing them in a brown paper bag with a banana for a few hours.
- Store leftover mousse in an airtight container in the refrigerator for up to 3 days. It may thicken slightly.
