- 1 pound shrimp, peeled and deveined
- 2 tablespoons chipotles in adobo sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup diced mango
- 1/4 cup diced red onion
- 1 jalapeno, seeded and minced
- 2 tablespoons chopped cilantro
- Juice of 1 lime
- 1 avocado, mashed
- 2 tablespoons sour cream
- 1 tablespoon lime juice
- Pomegranate seeds for garnish (optional)
Instructions
- In a bowl, combine shrimp, chipotles in adobo, olive oil, salt, and pepper. Marinate for 15 minutes.
- Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until cooked through.
- In a separate bowl, mix mango, red onion, jalapeno, cilantro, and lime juice to make the salsa.
- In another bowl, combine mashed avocado, sour cream, and lime juice to make the guacamole.
- Warm the tortillas in a dry skillet or microwave.
- Assemble tacos by placing shrimp on tortillas, top with mango salsa and guacamole.
- Garnish with pomegranate seeds if desired.
Notes
Adjust the heat level in the marinade and salsa to your preference. Use the barbecue for an extra smoky flavor if available. Pomegranate seeds add a burst of sweetness and are optional. Store any leftover salsa and guacamole in airtight containers in the refrigerator for up to 2 days.
