- 1 lb. (450 g) mixed ground beef and Italian sausage, browned and drained
- 1 medium onion, diced
- 3 cloves garlic, peeled and diced
- 1 red bell pepper, diced
- 2 cups (480 ml) chopped celery
- 2 (28-oz. / 795 g) cans diced tomatoes
- 1 (15-oz. / 425 g) can kidney beans, drained and rinsed
- 1 (15-oz. / 425 g) can black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp cayenne pepper (optional, for heat)
- 1/4 cup (60 ml) chopped fresh cilantro (optional, for garnish)
- Shredded cheese (optional, for serving)
- Sour cream (optional, for serving)
Instructions
- In a skillet over medium heat, brown the ground beef and Italian sausage until fully cooked. Drain excess fat and set aside.
- Spray a large pot with nonstick cooking spray and heat over medium heat. Add the diced onion, garlic, red bell pepper, and chopped celery. Sauté for 5-7 minutes until the vegetables are softened.
- Add the browned meat to the pot with the vegetables. Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, black pepper, and cayenne pepper, if using.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 4 hours, stirring occasionally, to allow the flavors to meld together.
- Before serving, taste and adjust seasoning if necessary. Garnish with chopped fresh cilantro, if desired.
- Serve hot with shredded cheese and sour cream on the side, if desired.
Notes
- This chili can be stored in an airtight container in the refrigerator for up to 3 days.
- It also freezes well for up to 3 months.
- If you prefer a spicier chili, increase the cayenne pepper or add a diced jalapeño.
