A delicious twist on the traditional dish, this recipe combines crispy chicken, fluffy mashed-potato waffles, and a spicy-sweet syrup.

For the Chicken:

  • 1 lb. thinly sliced boneless chicken breast
  • 1 egg, beaten
  • 1 tablespoon milk
  • 1 tablespoon coconut flour
  • 1 tablespoon arrowroot flour or cornstarch
  • 1/2 tablespoon paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 12 tablespoons coconut oil for frying

For the Waffles:

  • 2 cups mashed potatoes
  • 1/2 cup almond flour
  • 2 eggs
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup almond milk
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt

For the Maple Sriracha Syrup:

  • 1/4 cup maple syrup
  • 1/21 tablespoon sriracha sauce
  • Optional for serving: avocado slices

Instructions

  1. Marinate the Chicken:
    • Place chicken in a sealable bag. Mix egg and milk, and pour into the bag. Let sit for 10 minutes.
    • Combine coconut flour, arrowroot flour, paprika, salt, pepper, onion powder, and garlic powder in a bowl.
    • Drain excess egg/milk from the bag, then add seasoning mix. Massage to coat the chicken evenly.
  2. Cook the Chicken:
    • Heat coconut oil in a skillet over medium-high heat.
    • Fry chicken for about 3 minutes per side until cooked through. Transfer to a paper towel-lined plate.
  3. Prepare Waffle Batter:
    • Preheat waffle iron to the highest setting.
    • Mix together mashed potatoes, almond flour, eggs, olive oil, almond milk, baking powder, baking soda, and salt.
  4. Cook the Waffles:
    • Place a scoop of batter in the center of the hot waffle maker. Close and cook for 3-4 minutes until crisp. Repeat with remaining batter.
  5. Make Maple Sriracha Syrup:
    • Mix maple syrup and sriracha in a small bowl.

Notes

  • Ensure chicken is thinly sliced for even cooking.
  • Adjust sriracha quantity in syrup for desired heat level.
