Cherry Chocolate Cookies

This recipe is probably very similar to what you’ve been making already but with a few twists (good twists) here and there.

I threw in some fresh cherries because that’s what I had in my fridge and also because I like the cherry chocolate combo, but feel free to add any fruit of your choice as long as its not very watery. Raisins would taste wonderful in these cookies as well.

Description

A twist on a classic chocolate chip cookie, these cookies feature fresh cherries and almond meal for a delightful crunch.

Ingredients

Units Scale
  • 2 eggs
  • 1 1/2 cups (355 ml) all purpose flour
  • 1/2 cup (118 ml) almond meal
  • 1/4 cup (60 ml) unsweetened cocoa
  • 1/2 cup (118 ml) semi sweet chocolate chips
  • 1/2 cup (118 ml) butter
  • 1 cup (237 ml) brown sugar
  • 1/2 cup (118 ml) chopped fresh cherries

Instructions

  1. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper or non-stick spray.
  2. In a bowl, mix together all-purpose flour, baking soda, and baking powder.
  3. Whisk together sugar and butter until pale and creamy.
  4. Add eggs and continue whisking.
  5. Add melted chocolate and cocoa and whisk until well combined.
  6. Mix in flour and almond meal to form a smooth batter.
  7. Add cherries and mix.
  8. Using a small ice cream scoop or two spoons, form dough balls and place them a few inches apart on the baking sheet. Bake for 11 to 13 minutes.
  9. Cool completely before serving.

Notes

  • For intense cherry flavor, use more cherries or add a teaspoon of cherry extract.
  • To prevent the cookies from spreading too thin, chill the dough for at least 30 minutes before baking.
  • Substitute pecans or walnuts for added texture if you don’t have almonds.

Frequently Asked Questions

Can I use fresh cherries instead of dried in these cookies?

Fresh cherries have too much moisture and will make the dough soggy. Stick with dried or maraschino cherries (well drained and patted dry) for the best texture.

How do I keep the chocolate from sinking to the bottom of the cookies?

Make sure your dough is properly chilled before baking. Cold dough holds its shape better and keeps the chocolate chunks distributed evenly throughout.

How long do cherry chocolate cookies stay fresh?

Store them in an airtight container at room temperature for up to 5 days. They also freeze well for up to 3 months if wrapped tightly.
