Description

Savory waffles stacked with bacon, chicken and blue cheese with a hint of sweetness. Swerve sliders for brunch or a snack for a spin on chicken and waffles.


Ingredients

Waffles

  • 1 cup (240 ml) all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp kosher salt
  • 1 tbsp granulated sugar
  • 2 medium eggs, room temperature, separated
  • 1/8 tsp cream of tartar
  • 1 cup (240 ml) buttermilk
  • 1 tbsp unsalted butter, melted
  • 10 slices bacon, cooked and crumbled
  • 1 1/2 tsp bacon drippings (optional)
  • 6 oz (170 g) crumbled blue cheese

Sliders

  • 14 breaded chicken nuggets or bite-size breaded chicken breast pieces, store-bought or homemade
  • 14 slices bacon, cooked and cut in half
  • Crumbled blue cheese, to taste
  • Blue cheese dressing, to taste

Buffalo Hot Sauce Dip

  • 1/2 cup (120 ml) buffalo hot sauce
  • 2 tbsp butter, melted
  • 1/4 tsp garlic powder
  • Salt, to taste

Instructions

  1. For waffles: Preheat waffle maker according to manufacturer’s instructions. Preheat oven to 200°F and set a wire rack in a sheet pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, sugar, crumbled bacon, and blue cheese until incorporated. Set aside.
  3. In a separate medium bowl, whisk together the egg yolks, buttermilk, melted butter, and bacon drippings (if using). Set aside.
  4. In another bowl, whip the egg whites with the cream of tartar until stiff peaks form. Set aside.
  5. Pour the wet ingredients into the dry and mix gently until just combined — do not overmix. Gently fold in the whipped egg whites.
  6. Coat the preheated waffle maker with nonstick spray. Add about 3/4 cup batter per waffle and cook according to manufacturer’s instructions until fully cooked and the cheese is slightly oozing, about 5–7 minutes. Transfer cooked waffles to the wire rack and keep warm in the oven. Repeat with remaining batter.
  7. In a large bowl, combine the buffalo hot sauce, melted butter, garlic powder, and salt to make the dip. Add the chicken nuggets and toss to coat. Set aside.
  8. Adjust oven rack to the top third. Preheat oven to low broil. Using scissors or a knife, cut the waffles into four equal squares. Place a buffalo-coated chicken piece on top of half of the waffle squares. Top each with two bacon half-slices and crumbled blue cheese. Broil until the cheese is melted.
  9. Transfer to a serving platter. Drizzle with blue cheese dressing and additional hot sauce dip if desired. Top with the remaining waffle squares. Serve warm.

Notes

  • Store-bought or homemade breaded chicken nuggets both work here — grab whatever you have on hand.
  • The waffles are best made fresh and kept warm in a low oven while you coat the chicken in the buffalo dip.
