Description

This dark cherry zucchini smoothie is a creamy, protein-packed delight with a hint of chocolate from cacao nibs, perfect for a post-workout boost.


Ingredients

Scale
  • 1 cup of a nut based or other non-dairy milk
  • ½ of a large zucchini (sliced quartered then sliced into chucks to blend easily)
  • ? cup of frozen cherries (pitted)
  • 1 scoop of your favorite vegan protein powder (I used Vega Sport chocolate)
  • 1 tbl of ground flax or flax and chia blend
  • 1 tsp of maca powder
  • 1 – 2 tsp of your favorite nut butter
  • ¼ cup of crushed ice

Toppings are optional:

  • Hemp hearts
  • Pepitas
  • Granola
  • Cacao nibs


Instructions

  1. Add the non-dairy milk to the blender.
  2. Add the sliced and quartered zucchini.
  3. Add the frozen cherries.
  4. Add the vegan protein powder.
  5. Blend on the smoothie setting or the highest setting for about 45 seconds to 1 minute, or until completely smooth and creamy.
  6. Pour into a large cup and top with cacao nibs for added crunch.

Notes

Zucchini adds creaminess without altering the flavor and provides anti-inflammatory benefits. This smoothie is ideal for post-workout recovery due to its protein content. For a kid-friendly version, split into two smaller servings.
