- 250 gm pecan halves
- 2 1/2 tbsp (37 ml) butter
- 1/2 cup (120 ml) coconut palm sugar (or brown sugar)
- 2 tbsp (30 ml) good quality bourbon
- 1/4 cup (60 ml) granulated sugar
- 1 tsp cayenne pepper
Instructions
- Preheat your oven to 300°F (150°C).
- In a medium saucepan over medium heat, melt the butter.
- Stir in the coconut palm sugar and granulated sugar, mixing well until the sugars are dissolved.
- Add the bourbon to the mixture and cook for about 1 minute, allowing it to start bubbling.
- Stir in the cayenne pepper, followed by the pecan halves, ensuring they are well coated with the mixture.
- Spread the pecans in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, stirring occasionally, until the pecans are toasted and fragrant.
- Remove from the oven and let them cool completely on the baking sheet before serving or storing.
Notes
- Store the pecans in an airtight container at room temperature for up to a week.
- For a less spicy version, reduce the cayenne pepper.
- These pecans make a great topping for salads or desserts.
