Description

Toasted pecans with a kick of cayenne and a bourbon punch, creating a smoky and spicy snack.

Ingredients

Units Scale
  • 250 gm pecan halves
  • 2 1/2 tbsp (37 ml) butter
  • 1/2 cup (120 ml) coconut palm sugar (or brown sugar)
  • 2 tbsp (30 ml) good quality bourbon
  • 1/4 cup (60 ml) granulated sugar
  • 1 tsp cayenne pepper

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a medium saucepan over medium heat, melt the butter.
  3. Stir in the coconut palm sugar and granulated sugar, mixing well until the sugars are dissolved.
  4. Add the bourbon to the mixture and cook for about 1 minute, allowing it to start bubbling.
  5. Stir in the cayenne pepper, followed by the pecan halves, ensuring they are well coated with the mixture.
  6. Spread the pecans in a single layer on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 15-20 minutes, stirring occasionally, until the pecans are toasted and fragrant.
  8. Remove from the oven and let them cool completely on the baking sheet before serving or storing.

Notes

  • Store the pecans in an airtight container at room temperature for up to a week.
  • For a less spicy version, reduce the cayenne pepper.
  • These pecans make a great topping for salads or desserts.
