Description

These blueberry tarragon crumble bar cookies combine the sweet juiciness of fresh blueberries with the unique anise-like flavor of tarragon, all atop a buttery crumbly base.


Ingredients

  • 2 cups fresh blueberries
  • 1 tablespoon tarragon
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup cold butter
  • 1 egg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and 1 teaspoon baking powder.
  3. Mix in salt and vanilla extract.
  4. Use a fork or pastry cutter to blend in the butter and egg.
  5. Dough will be crumbly.
  6. Pat half of dough into the prepared pan.
  7. In another bowl, stir together the sugar and cornstarch.
  8. Gently mix in the blueberries and tarragon.
  9. Spread the blueberry mixture evenly over the crust.
  10. Crumble the remaining dough over the berry layer.
  11. Bake in preheated oven for 45 minutes, or until top is slightly brown.
  12. Cool completely before cutting into squares.

Notes

For a stronger tarragon flavor, increase the amount of tarragon slightly. These bars can be stored in an airtight container at room temperature for up to 3 days. They pair well with a scoop of vanilla ice cream or a dollop of whipped cream. If you prefer a less sweet dessert, reduce the sugar in the blueberry layer slightly.
