A refreshing and aromatic sorbet made with fresh blackberries and a hint of aniseed, perfect for a summer treat.

- 200 grams sugar
- 275 millilitres hot water
- 5 teaspoons aniseed
- 400 grams fresh blackberries - washed
Instructions
- Combine the sugar and hot water in a saucepan and stir until the sugar dissolves.
- Add the aniseed and let it infuse for about 10 minutes.
- Strain the mixture to remove the aniseed.
- Blend the blackberries until smooth, then strain to remove seeds.
- Mix the blackberry puree with the aniseed syrup.
- Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
- Freeze for at least 4 hours before serving.
