In-N-Out meets taco night! These flavorful tacos are loaded with caramelized onions, crispy bacon, and a special Animal Spread.

- 2 tbsp (30 ml) neutral-flavored oil
- 2 yellow onions
- 1 lbs (454 g) ground beef
- 1 tsp yellow mustard
- Kosher salt
- Flour tortillas
- Sliced American cheese
- 6 slices bacon
- Iceberg Lettuce
- 1 large tomato
- Animal Spread:
- 1/4 cups (59 ml) mayonnaise
- 2 tbsp (30 ml) ketchup
- 1 tbsp (15 ml) sweet pickle relish
- 1/2 tsp white vinegar
- Kosher salt
Instructions
- Heat 1 tablespoon of oil in a medium skillet over medium-low heat (approximately 300°F/150°C). Add onions, season with salt, and cook slowly for 30-40 minutes, stirring occasionally, until caramelized, golden, and soft.
- Raise heat to medium, add 1/4 cup of water to the pan, and stir to scrape up any browned bits. Simmer until all water has evaporated.
- Remove onions to a small bowl and set aside.
- Add the remaining 1 tablespoon of oil to the skillet. Add ground beef and mustard, season generously with salt, and cook over medium heat (approximately 350°F/175°C), breaking up the beef into bite-sized pieces, until cooked through (about 4-5 minutes).
- Use a slotted spoon to remove the beef to a medium bowl.
- Place a slice of American cheese on each tortilla. Melt the cheese by microwaving for about 10 seconds each or heating the tortillas in a skillet over medium heat (approximately 350°F/175°C).
- Top each melted cheese-covered tortilla with beef, lettuce, tomato, bacon, animal spread, and caramelized onions.
- Animal Spread
- Combine mayonnaise, ketchup, sweet pickle relish, and white vinegar in a small mixing bowl. Season with kosher salt.
Notes
- For richer flavor, use a higher fat ground beef like chuck or brisket.
- To prevent soggy tortillas, warm them briefly in a dry skillet before adding toppings.
- If you don’t have sweet pickle relish, a teaspoon of sugar added to the Animal Spread will provide a similar sweetness.
