- 1 tbsp olive oil
- 1/2 lbs (227 g) ground beef
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1 clove garlic
- 1 cups (237 ml) cheddar cheese
- 1/2 tomatoes
- 2 jalapeños
- 1 avocado
- 2 scallions

Instructions
- Heat skillet over medium-high heat with oil.
- Cook ground beef until browned, then add chili powder and garlic.
- Preheat oven to 350°F (177°C).
- Place peppers on a lined sheet pan.
- Top with spiced beef.
- Top with cheese, tomatoes, and jalapeños.
- Bake for 10 minutes at 350°F (177°C), or until cheese is melted and everything is warm.
- Garnish with avocado, scallions, and a drizzle of sour cream.
Notes
- For optimal browning, ensure the ground beef is well-drained before adding the spices.
- If you prefer a milder flavor, remove the seeds and membranes from the jalapeños before adding them to the peppers.
