Description

These mini-nacho peppers are packed with seasoned ground beef and melted cheddar. A fun appetizer or light meal.


Ingredients

  • 1 tbsp olive oil
  • 1/2 lbs (227 g) ground beef
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1 clove garlic
  • 1 cups (237 ml) cheddar cheese
  • 1/2 tomatoes
  • 2 jalapeños
  • 1 avocado
  • 2 scallions
  • sour cream

Instructions

  1. Heat skillet over medium-high heat with oil.
  2. Cook ground beef until browned, then add chili powder and garlic.
  3. Preheat oven to 350°F (177°C).
  4. Place peppers on a lined sheet pan.
  5. Top with spiced beef.
  6. Top with cheese, tomatoes, and jalapeños.
  7. Bake for 10 minutes at 350°F (177°C), or until cheese is melted and everything is warm.
  8. Garnish with avocado, scallions, and a drizzle of sour cream.

  • For optimal browning, ensure the ground beef is well-drained before adding the spices.
  • If you prefer a milder flavor, remove the seeds and membranes from the jalapeños before adding them to the peppers.
