Description

Homemade beef and broccoli beats every takeout version because the beef is velveted first — coated in a cornstarch slurry that gives it a silky, tender texture when stir-fried. The sauce is a straightforward mix of soy, oyster sauce, and garlic that caramelizes in the wok and clings to every piece. Fifteen minutes from wok to plate.

  • 1 1/2 lbs flank steak, sliced thin against the grain
  • 4 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 3 tablespoons water
  • Steamed rice for serving

Instructions

  1. Toss the sliced beef with 1 tablespoon cornstarch, 1 tablespoon soy sauce, and Shaoxing wine. Set aside 15 minutes.
  2. Blanch the broccoli in boiling water for 1 minute. Drain and set aside.
  3. Mix the sauce: 1/4 cup soy sauce, oyster sauce, brown sugar, and sesame oil.
  4. Heat oil in a wok over high heat until smoking. Stir-fry the beef in a single layer without moving for 1 minute, then toss for another minute. Remove.
  5. Add garlic and ginger to the wok, stir-fry 20 seconds. Add the broccoli, toss 1 minute.
  6. Return the beef. Pour in the sauce and cornstarch slurry. Toss 1 minute until the sauce thickens and coats everything.
  7. Serve immediately over steamed rice.

Notes

  • Velveting the beef — coating it in cornstarch before cooking — is the Chinese restaurant secret to impossibly tender stir-fried meat.
  • Slice the beef against the grain and as thin as possible. Partially freezing it for 20 minutes makes thin slicing much easier.
  • Work in a single layer and do not stir for the first minute — this gives the beef a sear rather than a steam.
