Dry Ingredients
- 1 cup almond flour
- 1/3 cup tapioca flour
- 2 tbsp coconut flour
- 1 1/2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
Wet Ingredients
- 1 cup apple sauce
- 3 eggs
- 1/2 cup date paste
- 1 apple (chopped)
Topping
- 1 tsp ghee
- 1/2 cup pecans or walnuts (crushed)
- 1/2 tsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the dry ingredients.
- In a separate bowl, combine the wet ingredients until smooth.
- Add the dry ingredients to the wet ingredients and stir until well combined.
- Stir in the chopped apple.
- Portion the batter into a greased muffin tin or use paper baking cups, filling each cup about 3/4 of the way up.
- In a small bowl, combine the ghee, pecans or walnuts, and cinnamon for the topping. Sprinkle a bit of the topping on top of each muffin.
- Bake for 20-23 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool before serving. Enjoy!
