- 1 lbs (454 g) day-old white French bread
- 10 slices bacon
- 2 tbsp fresh sage
- 1 shallot or 1/2 onion
- 3 tbsp butter
- 1 tbsp fresh rosemary
- 1 1/2 tsp fresh thyme
- 1 1/2 cups (355 ml) chopped apple
- 1 cup (237 ml) dried cranberries
- 3 cups (710 ml) low sodium chicken broth
- 2 eggs
Instructions
- Preheat oven to 400°F (204°C). Spread bread on a baking sheet and bake for 15 minutes, stirring occasionally, until lightly golden.
- Place bacon on a foil-lined baking sheet and bake at 400°F (204°C) for 15-20 minutes, until cooked. Transfer to a paper towel-lined plate; reserve 1 tablespoon of bacon fat.
- In a large skillet over medium heat, add reserved bacon fat and sage. Stir for 1 minute, then add shallot and 1 tablespoon butter. Cook until tender, about 1-2 minutes.
- Add remaining herbs and cook for 30 seconds.
- Add the butter/herb mixture to the bowl with the bread, apples, and craisins. Toss to coat. Chop the cooked bacon and add, tossing again.
- In the bacon grease skillet, add broth and whisk gently over medium heat until simmering. Add butter and whisk until melted. Pour over bread mixture.
- Add whisked eggs and fold everything together.
- Heat oven to 350°F (177°C). Grease a 9×10 to 9×13 inch casserole dish and pour in the stuffing mixture.
- Cover with foil and bake for 40 minutes. Uncover and bake for an additional 15 minutes, or until golden brown.
Notes
- For a deeper apple flavor, use a mix of tart and sweet apples like Granny Smith and Honeycrisp.
- If you don’t have fresh herbs, use 1 teaspoon of dried herbs per 1 tablespoon of fresh.
- Leftover stuffing can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
