Description

Sweet and savory stuffing with crunchy bacon and tart apples. Perfect for Thanksgiving or any holiday!


Ingredients

  • 1 lbs (454 g) day-old white French bread
  • 10 slices bacon
  • 2 tbsp fresh sage
  • 1 shallot or 1/2 onion
  • 3 tbsp butter
  • 1 tbsp fresh rosemary
  • 1 1/2 tsp fresh thyme
  • 1 1/2 cups (355 ml) chopped apple
  • 1 cup (237 ml) dried cranberries
  • 3 cups (710 ml) low sodium chicken broth
  • 2 eggs

Instructions

  1. Preheat oven to 400°F (204°C). Spread bread on a baking sheet and bake for 15 minutes, stirring occasionally, until lightly golden.
  2. Place bacon on a foil-lined baking sheet and bake at 400°F (204°C) for 15-20 minutes, until cooked. Transfer to a paper towel-lined plate; reserve 1 tablespoon of bacon fat.
  3. In a large skillet over medium heat, add reserved bacon fat and sage. Stir for 1 minute, then add shallot and 1 tablespoon butter. Cook until tender, about 1-2 minutes.
  4. Add remaining herbs and cook for 30 seconds.
  5. Add the butter/herb mixture to the bowl with the bread, apples, and craisins. Toss to coat. Chop the cooked bacon and add, tossing again.
  6. In the bacon grease skillet, add broth and whisk gently over medium heat until simmering. Add butter and whisk until melted. Pour over bread mixture.
  7. Add whisked eggs and fold everything together.
  8. Heat oven to 350°F (177°C). Grease a 9×10 to 9×13 inch casserole dish and pour in the stuffing mixture.
  9. Cover with foil and bake for 40 minutes. Uncover and bake for an additional 15 minutes, or until golden brown.

Notes

  • For a deeper apple flavor, use a mix of tart and sweet apples like Granny Smith and Honeycrisp.
  • If you don’t have fresh herbs, use 1 teaspoon of dried herbs per 1 tablespoon of fresh.
  • Leftover stuffing can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
