Description

This Hearty Sausage Skillet combines Italian sausage, onions, bell peppers, and potatoes for a quick and filling meal ready in under 30 minutes.


Ingredients

  • 2 medium red potatoes (cubed)
  • 2 bell peppers (any color)
  • 1 medium onion (cut into slices)

  • 2 tablespoons olive oil


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the cubed potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until they start to soften and turn golden brown.
  3. Add the sliced onions and bell peppers to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.
  4. Slice the Italian sausage into bite-sized pieces and add them to the skillet. Cook for 8-10 minutes, stirring occasionally, until the sausage is browned and cooked through.
  5. Season with salt and pepper to taste. Stir everything together and cook for an additional 2 minutes to let the flavors meld.
  6. Serve hot and enjoy!

Notes

For a spicier version, use hot Italian sausage. This dish is great for meal prep; store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through.
