Description

This Super Fresh Bruschetta features ripe, juicy tomatoes and fragrant basil on crispy grilled bread, making it a perfect appetizer or snack.


Ingredients

Scale
  • 4 slices of fresh crusty bread, such as ciabatta
  • 2 ripe tomatoes, chopped
  • Freshly torn basil leaves (or substitute with fresh mint, thyme, marjoram, or oregano)
  • 2 tablespoons extra virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your grill or a grill pan over medium-high heat.
  2. Chop the tomatoes roughly into similar-sized pieces and place them in a bowl.
  3. Add sea salt, freshly ground black pepper, and a generous slosh of extra virgin olive oil to the tomatoes. Toss to combine and set aside to marinate.
  4. Grill the slices of bread for about 2-3 minutes on each side, until they are golden brown and have grill marks.
  5. Once the bread is grilled, top each slice with the marinated tomatoes.
  6. Garnish with freshly torn basil leaves or your choice of herbs.
  7. Drizzle a little more extra virgin olive oil over the top before serving.

Notes

For the best flavor, use the freshest tomatoes you can find, preferably homegrown or from a local farmers’ market. Feel free to experiment with different herbs such as mint or oregano for a unique twist. This dish is best served immediately while the bread is still warm and crispy.
