Description

A touch of acidity and sweetness combined with crunchy almonds and soft quinoa give this salad a great mix of flavors and textures.


Ingredients

  • 2 cups kale, chopped
  • 1 cup strawberries, sliced
  • 1/2 cup quinoa, cooked
  • 1/4 cup almonds, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, combine chopped kale, sliced strawberries, cooked quinoa, and sliced almonds.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or chill for 30 minutes for flavors to meld.
