- 1 American Wagyu Sirloin
- 1 tsp kosher salt
- 0.5 tsp cumin
- 0.5 tsp chili powder
- 2 tbsp oil
- 0.5 cups (118 ml) sour cream
- 0.5 of an avocado
- 1 tbsp cilantro
- 1 tsp lime juice
- Salt
- Peas
- Radishes
- Red Onion
- Tortillas
- Lime Juice
Instructions
- Cook the steak
- Sprinkle salt, cumin, and chili powder on both sides of the steak.
- Heat a skillet (or grill) to medium-high heat (approximately 375°F (190°C)) and add the oil. Allow the oil to get hot.
- Cook the steak for about 3-5 minutes per side, depending on size or desired doneness.
- Allow the steak to rest for 10 minutes.
- Make the Crema
- Combine the sour cream, avocado, cilantro, and lime juice. Use a fork to help smash the avocado.
- Assembly
- Cut the steak against the grain and place in warmed tortillas.
- Top with peas, radishes, red onion, fresh lime juice, and avocado crema

- For perfectly tender steak, let it come to room temperature before cooking.
- Substitute your favorite thinly sliced grilled vegetables for the peas and radishes.
