Description

A vibrant summer salad with smoked salmon, blueberries, and a zesty lemon poppy seed dressing. No oven needed!


Ingredients

  • Half a large bunch Romaine lettuce
  • 3-4 oz (85-113 g) smoked salmon
  • 0.5 red onion
  • 0.3 cups (71 ml) fresh blueberries
  • 0.25 cups (59 ml) pistachios
  • Lemon wedges
  • Lemon Poppy Seed Dressing

Instructions

  1. Make the dressing.
  2. Transfer the lettuce to a platter.
  3. Scatter the salmon, red onion, blueberries, and pistachios over the top of the lettuce.
  4. Drizzle with the dressing and serve immediately.

Notes

  • For best flavor, use high-quality smoked salmon with a good texture.
  • If fresh blueberries aren’t in season, frozen blueberries can be used (thawed and gently patted dry).
  • To make ahead, prepare the dressing and chop the vegetables separately. Combine just before serving to prevent the lettuce from wilting.
