- Half a large bunch Romaine lettuce
- 3-4 oz (85-113 g) smoked salmon
- 0.5 red onion
- 0.3 cups (71 ml) fresh blueberries
- 0.25 cups (59 ml) pistachios
- Lemon wedges
- Lemon Poppy Seed Dressing
Instructions
- Make the dressing.
- Transfer the lettuce to a platter.
- Scatter the salmon, red onion, blueberries, and pistachios over the top of the lettuce.
- Drizzle with the dressing and serve immediately.
Notes
- For best flavor, use high-quality smoked salmon with a good texture.
- If fresh blueberries aren’t in season, frozen blueberries can be used (thawed and gently patted dry).
- To make ahead, prepare the dressing and chop the vegetables separately. Combine just before serving to prevent the lettuce from wilting.
