Description

Seared tuna steaks get a vibrant flavor boost from a bright, fresh salmoriglio sauce made right in the pan. Quick, delicious, and perfect for a weeknight meal.


Ingredients

  • 1/2 cup (120 ml) extra virgin olive oil, plus more for brushing the fish
  • Juice of 1 lemon
  • 2 tbsp (30 ml) hot water
  • 2 cloves garlic, peeled and minced
  • 3 tbsp (12 g) chopped fresh parsley
  • 1 tbsp (3 g) finely chopped fresh oregano or 1 tsp (1 g) dried oregano
  • 1 tbsp (10 g) brined capers, drained
  • 1/4 tsp (1 g) red pepper flakes, or more to taste
  • Salt and freshly ground black pepper, to taste
  • 4 tuna steaks (6-8 oz / 170-225 g each, about 1 inch / 2.5 cm thick)

Instructions

  1. Make the salmoriglio sauce: In a small saucepan, warm ½ cup olive oil over low heat. Whisk in the lemon juice and hot water.
  2. Add the minced garlic, chopped parsley, oregano, capers, red pepper flakes, and a light seasoning of salt and black pepper. Stir well and keep warm on the lowest heat setting.
  3. Preheat the grill for direct grilling to medium-high heat (about 450°F / 230°C).
  4. Lightly brush the tuna steaks with olive oil and season both sides with salt and pepper.
  5. Place the tuna on the grill grate and cook for about 12 minutes total, turning once halfway through, until opaque and flaky when pressed with a fork. For rare tuna, reduce the grilling time.
  6. Transfer the cooked tuna to a platter or individual plates. Drizzle with the warm salmoriglio sauce and serve the remaining sauce on the side.

Notes

  • For best results, use sushi-grade tuna steaks to avoid undercooking.
  • If fresh oregano is available, substitute 1 tablespoon of chopped fresh oregano for the dried oregano.
  • To make ahead, prepare the salmoriglio sauce up to a day in advance and store it separately in the refrigerator.
