- 2 1/4 cups unbleached all-purpose flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1 cup shredded coconut
- 1/2 tsp salt
- 1 cup sugar
- 3 oz. cream cheese (at room temperature, cut into small pieces)
- Zest of 1 key lime
- 1/2 cup butter (melted and still warm)
- 1 large egg (room temperature)
- 1 Tbsp. whole milk
- 1 Tblsp. Key lime juice
- 1/2 cup powdered sugar for rolling cookies
Instructions
- Preheat oven to 350 F.
- Line cookie sheet with parchment paper.
- Place sugar, cream cheese and lime zest in a large bowl.
- Pour warm butter over this and whisk until all combined.
- Add egg, milk and juice, whisk well.
- Add flour, salt, baking soda, baking powder and coconut.
- Mix with rubber spatula until completely combined.
- Form 1-inch balls and lightly coat with powdered sugar.
- Place cookies on the baking sheet about 2 inches apart.
- Bake for 10 min.
