Description

Quick, flavorful noodles packed with veggies and a sesame-soy punch. Perfect for a weeknight dinner or a satisfying snack.


Ingredients

  • 1 packet instant noodles with flavor packet
  • 1/4 cup broccoli
  • 1/4 cup diced carrots
  • 2-3 whole green chillies
  • 1 small onion
  • 1 clove minced garlic
  • 2 tsp sesame seeds
  • 2 tbsp (30 ml) vegetable oil
  • 2 tsp soy sauce
  • 1 tsp sriracha sauce
  • green onions or scallions

Instructions

  1. Cook the noodles al dente (approximately 1 minute less than package directions). Drain and reserve.
  2. While noodles cook, heat oil in a pan over high heat until almost smoking. Reduce heat to medium-high.
  3. Add onions, chilies, garlic, carrots, and broccoli. Sauté for 3-4 minutes until softened but still crunchy.
  4. Add sesame seeds, soy sauce, sriracha sauce, and noodles; toss to combine.
  5. Heat through for 2-3 minutes.
  6. Serve garnished with scallions.

Notes

  • To prevent the noodles from sticking, toss them with a little oil after draining.
  • For a spicier dish, add more chili or a dash of chili garlic sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in a pan or microwave.
