Hearty bison shanks braised to tender perfection in a rich Asian-inspired sauce. A comforting, flavorful twist on a classic!

- 4 lbs (1814 g) Bison Osso Buco
- 1 bunch green onions
- 5 cloves garlic
- 5 stalks lemongrass
- 2 inches ginger
- 1 cups (237 ml) Madeira
- 1 cups (237 ml) tamari
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 5 pcs star anise
- 8 cups (1893 ml) water
Instructions
- Pat the bison dry and season with salt and freshly ground black pepper.
- Heat an enamel-coated, cast iron Dutch oven over medium-high heat.
- Add just enough vegetable oil to coat the bottom of the pot.
- Once the oil is hot, add the bison and let it sit without turning until it is deep golden brown.
- Flip the bison and brown the other side.
- Remove the bison from the pan and set aside on a plate.
- Add the green onions, garlic, lemongrass, and ginger to the oil and stir until they are just starting to brown.
- Add the Madeira, soy sauce, rice wine vinegar, brown sugar, star anise, and water.
- Return the bison to the pot.
- Bring to a simmer, then lower heat and cook for 3 hours at the stove top’s lowest setting.
- Alternatively, cook in a crock pot for 3 hours.
- After cooking, remove the bison from the pot and remove any silver skin.
- Put the bison in a heatproof dish, cover with aluminum foil, and keep it warm in the oven.
- Put the pot over medium heat and cook until the liquid has reduced by half.
- Add the reduced liquid to the bison.
- Serve hot with mashed potatoes and garnish with green onion.
Notes
- For deeper flavor, marinate the bison shanks in the Madeira and tamari for at least 2 hours before braising.
- If lemongrass is unavailable, substitute with 1 tablespoon of lemongrass paste or 1 teaspoon of lemongrass essential oil (use cautiously).
- Leftovers can be stored in the refrigerator for up to 4 days and reheated gently on the stovetop or in the microwave.
