Lemongrass Braised Bison Osso Buco

Description

Hearty bison shanks braised to tender perfection in a rich Asian-inspired sauce. A comforting, flavorful twist on a classic!


Ingredients

  • 4 lbs (1814 g) Bison Osso Buco
  • 1 bunch green onions
  • 5 cloves garlic
  • 5 stalks lemongrass
  • 2 inches ginger
  • 1 cups (237 ml) Madeira
  • 1 cups (237 ml) tamari
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 5 pcs star anise
  • 8 cups (1893 ml) water

Instructions

  1. Pat the bison dry and season with salt and freshly ground black pepper.
  2. Heat an enamel-coated, cast iron Dutch oven over medium-high heat.
  3. Add just enough vegetable oil to coat the bottom of the pot.
  4. Once the oil is hot, add the bison and let it sit without turning until it is deep golden brown.
  5. Flip the bison and brown the other side.
  6. Remove the bison from the pan and set aside on a plate.
  7. Add the green onions, garlic, lemongrass, and ginger to the oil and stir until they are just starting to brown.
  8. Add the Madeira, soy sauce, rice wine vinegar, brown sugar, star anise, and water.
  9. Return the bison to the pot.
  10. Bring to a simmer, then lower heat and cook for 3 hours at the stove top’s lowest setting.
  11. Alternatively, cook in a crock pot for 3 hours.
  12. After cooking, remove the bison from the pot and remove any silver skin.
  13. Put the bison in a heatproof dish, cover with aluminum foil, and keep it warm in the oven.
  14. Put the pot over medium heat and cook until the liquid has reduced by half.
  15. Add the reduced liquid to the bison.
  16. Serve hot with mashed potatoes and garnish with green onion.

Notes

  • For deeper flavor, marinate the bison shanks in the Madeira and tamari for at least 2 hours before braising.
  • If lemongrass is unavailable, substitute with 1 tablespoon of lemongrass paste or 1 teaspoon of lemongrass essential oil (use cautiously).
  • Leftovers can be stored in the refrigerator for up to 4 days and reheated gently on the stovetop or in the microwave.
