- 1 pound carton of cherry or grape tomatoes, halved or quartered
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- Juice of 1 lemon
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant, about 1 minute.
- Add shrimp and cook until pink, about 2-3 minutes per side.
- Remove shrimp and set aside.
- Add tomatoes to the skillet and cook until they begin to soften, about 5 minutes.
- Pour in white wine and lemon juice, and bring to a simmer.
- Return shrimp to the skillet and toss with the tomatoes and sauce.
- Season with salt and pepper to taste.
- Stir in fresh basil and parsley before serving.
