- 8 oz (227 g) boiled ham
- 4 oz (113 g) capicola
- 4 oz (113 g) salami
- 4 oz (113 g) provolone
- 1 cups (237 ml) diced grape tomatoes
- 16 oz (454 g) jar hot pepper rings
- 0.25 - 0.5 cups (59 - 118 ml) diced red onion
- 1 teaspoon dried oregano
- 0.25 cups (59 ml) olive oil
- 0.25 cups (59 ml) red wine vinegar
- 0.25 teaspoon sugar
- 0.25 teaspoon salt
- 0.25 teaspoon pepper
- pinch sugar
- 1 Italian baguette
- 3 cups (710 ml) shredded iceberg lettuce
Instructions
- Add all the ham, capicola, salami, provolone, tomatoes, peppers, and onion to a large bowl.
- Whisk the oregano, olive oil, vinegar, sugar, salt, and pepper in a small bowl and pour over the meat, cheese, and peppers.
- Mix well to combine, cover, and refrigerate for at least an hour.
- To serve, place the shredded lettuce on top of a piece of bread and top with the sub filling.
Notes
- For a richer flavor, use high-quality, freshly sliced meats and cheeses.
- If you don’t have grape tomatoes, use cherry or Roma tomatoes, halved or quartered.
- To prevent soggy bread, assemble the bruschetta just before serving.
