This appetizer tastes just like an Italian sub!
Perfect for parties or a quick weeknight dinner.


Ingredients

  • 8 oz (227 g) boiled ham
  • 4 oz (113 g) capicola
  • 4 oz (113 g) salami
  • 4 oz (113 g) provolone
  • 1 cups (237 ml) diced grape tomatoes
  • 16 oz (454 g) jar hot pepper rings
  • 0.25 - 0.5 cups (59 - 118 ml) diced red onion
  • 1 teaspoon dried oregano
  • 0.25 cups (59 ml) olive oil
  • 0.25 cups (59 ml) red wine vinegar
  • 0.25 teaspoon sugar
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • pinch sugar
  • 1 Italian baguette
  • 3 cups (710 ml) shredded iceberg lettuce

Instructions

  1. Add all the ham, capicola, salami, provolone, tomatoes, peppers, and onion to a large bowl.
  2. Whisk the oregano, olive oil, vinegar, sugar, salt, and pepper in a small bowl and pour over the meat, cheese, and peppers.
  3. Mix well to combine, cover, and refrigerate for at least an hour.
  4. To serve, place the shredded lettuce on top of a piece of bread and top with the sub filling.

Notes

  • For a richer flavor, use high-quality, freshly sliced meats and cheeses.
  • If you don’t have grape tomatoes, use cherry or Roma tomatoes, halved or quartered.
  • To prevent soggy bread, assemble the bruschetta just before serving.
