Description

This creamy, dreamy condiment elevates everything from burgers to eggs. Its easier to make than you think!


Ingredients

  • 1 whole organic/pastured egg
  • 1 organic/pastured egg yolk
  • 2 tsp apple cider vinegar
  • 1/4 to 1/2 tsp salt
  • 1 tsp organic cane sugar
  • 1 cup (237 ml) melted bacon grease
  • 2 strips crispy fried bacon

Instructions

  1. Prepare Ingredients
  2. Melt bacon grease and cool slightly, keeping it liquid. Finely chop crispy bacon strips and set aside.
  3. Combine Ingredients
  4. Place whole egg, egg yolk, apple cider vinegar, salt, and organic cane sugar into a wide-mouth jar or tall measuring cup.
  5. Blend Mixture
  6. Using an immersion blender, blend the mixture thoroughly, moving the blender wand slowly up and down to combine ingredients evenly.
  7. Emulsify the Mayonnaise
  8. With the blender running, very slowly drizzle in the melted bacon grease until the mixture fully emulsifies into a thick, creamy mayonnaise.
  9. OPTIONAL: Add Crispy Bacon
  10. Gently fold in finely chopped crispy bacon bits.
  11. Storage and Serving
  12. Transfer baconnaise to an airtight container and store in the refrigerator. Allow to sit at room temperature for 10-15 minutes before serving to soften.

  • For a smoother baconnaise, strain the bacon grease before using.
  • Use a stand mixer with a whisk attachment for larger batches.
