Description

Thousands of years from now, when aliens come to Earth, what will they find? Will they marvel at our technological advancements, or will they be baffled by our love of baconnaise?


Ingredients

Units Scale

1 whole organic/pastured egg

1 organic/pastured egg yolk

2 teaspoons apple cider vinegar

1/4 to 1/2 teaspoon salt (to taste)

1 teaspoon organic cane sugar

1 cup melted bacon grease (cooled slightly, but still liquid)

2 strips crispy fried bacon, finely chopped (OPTIONAL)


Instructions

Step 1: Prepare Ingredients

Ensure bacon grease is melted and cooled slightly but still liquid.

Finely chop crispy bacon strips and set aside.

Step 2: Combine Ingredients

Place whole egg, egg yolk, apple cider vinegar, salt, and organic cane sugar into a wide-mouth jar or a tall measuring cup.

Step 3: Blend Mixture

Using an immersion (stick) blender, blend the mixture thoroughly, moving the blender wand slowly up and down to combine ingredients evenly.

Step 4: Emulsify the Mayonnaise

With the blender running, very slowly drizzle in the melted bacon grease until the mixture fully emulsifies into a thick, creamy mayonnaise.

OPTIONAL Step 5: Add Crispy Bacon

Fold in finely chopped crispy bacon bits gently.

Step 6: Storage and Serving

Transfer baconnaise to an airtight container and store in the refrigerator.

Allow to sit at room temperature for 10-15 minutes before serving to soften.

Notes

Ensure bacon grease is slightly cooled to prevent the mayonnaise from separating.

If mayonnaise becomes too thick, thin it slightly with warm water, adding just a teaspoon at a time.

Baconnaise is ideal for sandwiches, burgers, salads, and dips.
