- 1 Can (439 g) Chickpeas
- 2 Tablespoons Extra Virgin Olive Oil
- 1/4 cup Grated Parmesan
- 1 Large Clove Garlic
- 1/4 tsp Fresh Cracked Black Pepper
- 1/4 tsp Salt
Instructions
- Preheat oven to 400°F (204°C).
- Drain, rinse, and pat dry the chickpeas, removing any excess skin or peeling.
- In a small bowl, stir together the chickpeas, 2 tablespoons extra virgin olive oil, 1/4 cup grated parmesan, minced garlic, 1/2 teaspoon fresh cracked black pepper, and 1/4 teaspoon salt.
- Bake for 30 minutes, stirring the chickpeas every 10 minutes.
- Let cool.
Notes
- For extra crispy chickpeas, spread them in a single layer on the baking sheet.
- Nutritional yeast can be used as a vegetarian alternative to parmesan cheese.
- Store leftover chickpeas in an airtight container at room temperature for up to 3 days.
