Spicy Crusted Salmon Burger

This burger is fast, deliciously spicy, and healthy, too. Don't be afraid to ditch the bun and nestle the crispy slider on top of a salad instead.
Ingredients
  • skinless salmon fillets, boneless and skinless
  • 2 tablespoons Thai red curry paste
  • thumb-size piece fresh root ginger, grated
  • 1 teaspoon soy sauce
  • 1 bunch coriander, half chopped, half leaves picked
  • 1 teaspoon vegetable oil
  • lemon wedge to serve
  • panko
Instructions
  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers.
  2. Put the panko onto a plate and roll the burger through it carefully. Making sure all sides are coated with the breadcrumbs.
  3. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
