Creamy Cherry Chocolate Gelato

  • 1 quart half-and-half
  • ½ cup sugar
  • 3 Safest Choice Egg yolks, whisked
  • 1 tablespoon Amaretto liqueur
  • 12 oz frozen cherries, thawed and chopped
  • 2 oz good quality chocolate, grated
  1. Combine half-and-half, sugar and egg yolks in double boiler; cook over medium heat, stirring, until mixture reaches 185 degrees F on a candy thermometer.
  2. Remove the mixture from the heat; set pan in an ice bath.
  3. After mixture has cooled, stir in Amaretto, chopped cherries and grated chocolate. Refrigerate, covered, at least 2 hours or overnight.
  4. Churn mixture in the ice cream maker according to manufacturer’s directions until not quite thick, about 20 minutes.
  5. Pour gelato in a freezer-safe container; freeze until set, about 3 hours.
