Spicy and Savory Tomato Marmalade
Recipe Type: Condiment, Side Dish
  • 1 pint ripe grape tomatoes, halved and minced
  • ½ Vidalia (sweet onion), thinly sliced and minced
  • 1 garlic clove (whole, remove after cooking)
  • ¼ cup balsamic vinegar
  • olive oil
  • dried chili
  1. Sweat onion and garlic in olive oil on medium-low heat.
  2. Add chopped tomatoes and s+p
  3. Cook down till tender.
  4. Add chili and balsamic vinegar.
  5. Cook on low heat for about ½ hour.
