Recipe: Norwegian Haddock with Mashed Potatoes and Onion Sauce

Norweigian Haddock is high in omega-3 and an excellent source of protein and vitamin B12
  • Haddock
  • 1.5 lb Norwegian Haddock loin
  • 1 tbsp flour
  • salt
  • pepper
  • Onion Sauce
  • 2 white onions
  • 4 tbsp butter
  • ½ tsp sugar
  • 1 tsp chopped parsley
  • Mashed Potatoes
  • 8 potatoes
  • 2 tbsp butter
  • 1 cup milk
  • salt
  • pepper
  1. Cut the Norwegian Haddock into 4 pieces.
  2. Mix the salt, pepper and flour in a large bowl.
  3. Roll the fish in the resulting mixture.
  4. Fry lightly for 2 to 4 minutes on each side in a frying pan.
  5. To prepare the sauce, brown the onions in the butter. Add sugar and leave to
  6. caramelize.
  7. Add chopped parsley to complete.
  8. Cook the potatoes in boiling water until they are fork-tender. Add the butter and
  9. milk. Whip until the mixture is smooth and even. Season with salt and pepper.
  10. Serve the haddock with sauce sprinkled over it and the mashed potatoes on the
  11. side.
