Chia Seed Pancakes

Mashed bananas keep these pancakes tender and chia seeds are an easy, subtle way to add more fiber, omega 3's and protein to breakfast.
  • ½ cup whole wheat flour
  • ½ cup flour
  • 1 cup whole oats
  • 1 Tbsp chia seeds
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Dash of salt
  • 1 cup buttermilk
  • ½ tsp vanilla
  • 1-2 bananas, mashed
  • 1 egg
  1. Mix the dry ingredients.
  2. Stir in the wet ingredients until just mixed.
  3. Cook the pancakes on a griddle at medium-high heat.
  4. Once bubbles start to form on top, flip the pancake and cook until both sides are golden.
  5. Serve with berries, jam, almond {or peanut} butter and maple syrup.
