Three Cheese Flat Bread - Castello Alps Selection

Feature the Castello Moments Alps Selection cheeses with build-your-own three cheese flat breads.
Ingredients
Easy Pizza Crust or Other Flat Bread Crust
  • 2¼ tsp active dry yeast
  • 1 cup warm water
  • 1 tsp sugar
  • 1 tsp salt
  • 3 Tbsp olive oil (I use 1 Tbsp)
  • 3 – 3½ cups bread flour (I use 3 cups so that the dough stays moist.)
  • Castello Classic, grated
  • Castello Weissbier, grated
  • Castello Hirten, finely grated like Parmesan
Roasted Fig Flat Bread
  • 1 purple onion, sliced in rings
  • Figs, sliced
  • Arugula, rinsed and patted dry
  • Olive oil or honey, optional
BBQ Chicken Flat Bread
  • Chopped chicken, chopped (*I used left-over Buffalo Chicken strips)
  • Mix of your favorite BBQ Sauces
  • A few dashes of balsamic vinegar
  • A few drops of hot sauce
  • 1 purple onion, sliced in rings
  • Arugula, rinsed and patted dry
  • Olive oil or honey, optional
Instructions
Easy Pizza Crust
  1. Dissolve the yeast in the water and let it rest for five minutes.
  2. Once the yeast mixture is bubbling, add the salt, sugar, oil and mix together.
  3. Gradually add the flour until the dough is pliable and easy to work with.
  4. Knead for 5-10 minutes.
  5. Place the dough ball in a greased container and cover with plastic wrap.
  6. Let the dough rise for 1-2 hours until double in size and the indent from your finger remains.
  7. Punch down the dough and divide into three balls.
  8. Working with one ball at a time, pat into a disc and begin stretching out.
  9. If necessary, use a rolling pin to roll the dough into an 8-12-inch round pizza crust or an oblong flat bread.
  10. Place the crust on a wooden pizza wheel or directly on the baking pan.
Roasted Fig Flat Bread
  1. Generously sprinkle the dough with both the Classic and Weissbier cheeses. Arrange sliced figs and caramelized onion rings over the cheese.
  2. Finely grate the Hirten cheese over the top of the pizza.
  3. Drizzle the crust with olive oil if desired.
  4. Bake the pizza on a pre-heated pizza stone in the BBQ or in the oven at the highest heat. If you don’t have a pizza stone, you can use a cooking pan with holes.
  5. Cook the pizza until the crust is browned, roughly 7-10 minutes.
  6. Remove the flat bread from the oven and top with arugula.
  7. Drizzle the crust with honey if desired.
Three cheese BBQ Chicken Variation
  1. Generously sprinkle the dough with both the Classic and Weissbier cheeses. Arrange BBQ chicken and caramelized onion rings over the cheese.
  2. Finely grate the Hirten cheese over the top of the pizza.
  3. Drizzle the crust with olive oil if desired.
  4. Bake the pizza on a pre-heated pizza stone in the BBQ or in the oven at the highest heat. If you don’t have a pizza stone, you can use a cooking pan with holes.
  5. Cook the pizza until the crust is browned, roughly 7-10 minutes.
  6. Remove the flat bread from the oven and top with arugula.
  7. Drizzle the crust with honey if desired.
