One Pot Pancetta Okra

Okra created from a fuse of cultures but always with a fresh take of a Californian.
  • ¼ lb. (4 oz.) pancetta, diced
  • ¼ medium white onion, diced
  • 3 cloves garlic, thinly sliced
  • 1 lb. (16 oz.) okra, .5" pieces
  • 6 oz. low- sodium chicken stock
  • ¼ tsp. cracked black pepper
  • ½ tsp. red chili flakes, to taste
  1. Render pancetta in medium-sized pot over medium heat till it starts to get color.
  2. Add onion and okra; cook till onions are translucent.
  3. Add garlic, pepper, chili flake and chicken stock; deglaze the bottom of the pot and then cook off the stock.
  4. When no liquid is left, saute for 1 minute to bring color to the dish.
  5. Serve immediately; Enjoy & repeat!
