Shishito Pepper and Tomato Salad

Refreshing summer salad using ripe tomatoes and aromatic peppers.
  • 1 pound (45 g) shishito peppers (you could use any other kind sweet peppers, if not available)
  • 1 tbsp. olive oil
  • Pinch of coarse salt (kosher, or sea salt)
  • pinch fresh ground black pepper
  • 1 large tomato (preferably heirloom)
  • 1 tsp. white wine vinegar
  • 1 handful thinly sliced green onions
  • 1 handful thinly sliced cilantro
  1. In a sauté pan heat 1 tbsp. olive oil over high temperature until fragrant. Add peppers, salt and black pepper. Sauté for five minutes, or until skin starts to blister. Remove from heat. In a clean bowl mix sliced tomatoes, cilantro, green onion, cooked peppers, and white wine vinegar. Serve immediately!
