Leftover roasted chicken makes a great Chicken salad. And turn it a bit French by dressing it with a tarragon flavored lemony vinaigrette.
  • 2 cups shredded chicken
  • 2 spring onions, sliced thinly
  • 1 stalk celery, cut into small dice
  • 2 T chopped parsley
  • 2 T chopped celery leaves
  • 1 T chopped tarragon
  • 4 T olive oil
  • 2 T lemon juice
  • 2 T red or white wine vinegar
  • 2 teaspoons mustard
  • Salt and pepper, to taste
  1. Toss thoroughly but gently, then taste and adjust seasonings.
  2. Can easily be scaled up.
