a protein packed salad to give new moms the energy they need
  • spinach leaves
  • chickpeas
  • red onion
  • goat cheese crumbles
  • egg
  • salt and pepper
  • olive oil
  • balsamic vinaigrette
  1. Start by boiling an egg.
  2. Once ready peel and set aside.
  3. Layer a large bowl with cleaned spinach leaves.
  4. Drain and rinse the chickpeas.
  5. Toss with salt, pepper, and olive oil.
  6. Add in a few slices of red onion.
  7. Let mixture sit in the fridge until egg is ready, then place on top of spinach.
  8. Crumble goat cheese over chickpeas.
  9. Slice the egg and scatter on top.
  10. Finish with balsamic dressing and more salt and pepper.
