Pannekaken {Norwegian Pancakes}

These thin, tender pancakes are easy to make and can be filled with a smorgasbord of toppings.
  • 3 eggs
  • 1 cup (99g) flour
  • 1½ cups (355mL) milk
  • ⅛ tsp (0,6g) salt
  1. Mix the ingredients together, whisking them until a thin batter forms.
  2. Spoon the batter onto a lightly-buttered skillet or griddle at medium heat and use the spoon to spread the batter into a thin circle.
  3. Cook the pancakes until they are lightly golden on both sides. They will cook quickly so keep a close watch.
  4. Serve the pancakes with the toppings of your choice, including powdered sugar, syrup, berries and jam.
