Maddo's Pasta Marinara

This recipe belongs to an old friend from Ghana and was a favorite last-minute meal during our law school years.
  • 10 Roma tomatoes
  • 2 large cloves of garlic
  • 2 tablespoons of olive oil
  • Dried or fresh oregano, thyme and sweet basil to taste
  • Salt and pepper to taste
  • Whole wheat spaghetti
  1. Heat the olive oil in a heavy skillet.
  2. Roughly chop the tomatoes and set aside.
  3. Chop the garlic (don't mince) and place in the oil over low heat.
  4. Sweat the garlic for about 5 minutes.
  5. Add the tomatoes and cook down over a medium flame (This takes approximately 10 minutes.) and stir occasionally.
  6. Add the herbs, salt and pepper to taste.
  7. Mash the tomatoes and continue to simmer.
  8. Add a small amount of water for a saucier consistency.
  9. Boil the pasta and drain.
  10. Top the spaghetti with the sauce once it's reached the desired consistency.
