Corn and Goat Cheese-Stuffed Tribelli Peppers

  • 10 Tribelli peppers, cut in half, seeds removed
  • 8 ounces goat cheese (French goat cheese, if possible)
  • ¼ Plain, whole milk Greek yogurt
  • ½ fresh corn, cut off the cob
  • 1 tsp chili powder
  • salt, to taste
  • 2 Tablespoons fresh basil, chopped
  1. Stir together goat cheese, yogurt, corn, chili powder, salt and basil.
  2. Fill peppers with mixture and serve!
