Zucchini flatbread with red onion

Mediterranean healthy dairy-free zucchini flatbread. A delicious veggie pizza for everyone!
  • 1 thin rectangular ready rolled pizza dough (low-fat lactose-free)
  • 2 small zucchini
  • 1 red onion
  • 1 small green pepper (optional)
  • 2 tablespoons of Spanish extra virgin olive oil
  • ½ red chilli, deseeded and chopped
  • 1 teaspoon thyme
  • salt and black pepper
  1. Preheat oven 180 ยบ C.
  2. Wash and slice the zucchinis evenly.
  3. Peel and slice the onion and green pepper.
  4. Roll out the dough and place over a lined tray.
  5. Sprinkle the spices on the dough: thyme, chilli and any other you like.
  6. Place the zucchini, onion and pepper on the dough. Sprinkle with salt and ground black pepper to taste.
  7. Bake for 15-20 minutes until crisp and golden.
