- 2 large eggs
- 1 tbsp pure vanilla extract
- 0.5 tsp salt
- 1 tsp baking powder
- 1 tbsp ground cinnamon
- 2.5 cups (592 ml) all-purpose flour

Instructions
- Preheat oven to 350°F (177°C).
- Lightly grease an 8×8-inch baking pan with cooking spray and line with parchment paper.
- In a large bowl of a stand mixer, cream together butter and sugar. Mix in eggs and vanilla, followed by salt, baking powder, cinnamon, and flour. Mix until smooth.
- Pour half of the blondie batter into the prepared baking pan and smooth into an even layer.
- Spoon dulce de leche onto the layered batter; then, spoon and smooth the remaining blondie batter on top.
- In a small bowl, mix 3 tablespoons sugar with 1¼ teaspoons cinnamon and sprinkle on top.
- Bake for 30-35 minutes.
- Let the dulce de leche churro blondies cool before slicing.
- Store in an airtight container for up to several days.
- Serve by themselves or with a drizzle of dulce de leche on top (and your favorite ice cream if desired).
Notes
- For a richer flavor, use brown butter instead of regular unsalted butter.
- If you don’t have dulce de leche, you can substitute a caramel sauce or sweetened condensed milk.
- To prevent sticking, let the blondies cool completely in the pan before cutting.
