Description

Flaky puff pastry envelops creamy brie and tart cranberry sauce. A warm, elegant appetizer perfect for winter gatherings.


Ingredients

  • 1 round (349 g) of Brie cheese
  • 1 package frozen puff pastry, thawed (preferably with butter, such as Dufour brand)
  • 3/4 cup whole berry cranberry sauce
  • 1-2 tablespoons dried cranberries
  • 1/4 teaspoon minced fresh rosemary
  • 1 egg, beaten with 1 teaspoon water (for egg wash)

Instructions

  1. Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
  2. For the Puff Pastry: On a lightly floured surface, roll out the puff pastry to smooth out the seams. Cut a large round shape from the pastry and place it on the prepared baking sheet. Save any pastry scraps for decoration.
  3. For the Brie: Slice off the top rind of the Brie round.
  4. For the Cranberry Sauce: In a small bowl, mix together the cranberry sauce, dried cranberries, and minced rosemary.
  5. Assemble: Spoon the cranberry mixture over the center of the puff pastry. Place the Brie, cut side down, on top of the cranberry sauce. Fold the puff pastry over the Brie, sealing it with the egg wash. Flip the wrapped Brie over and place it seam side down on the baking sheet.
  6. Chill: Refrigerate the prepared Brie for about 30 minutes.
  7. Decorate and Bake: Brush the Brie with the egg mixture. Use the reserved pastry scraps to create decorative shapes and adhere them to the Brie with the egg wash. Bake for about 25 minutes, or until golden brown.
  8. Cool and Serve: Allow the baked Brie to cool for 30 minutes before serving.

Notes

  • For a richer flavor, use a high-quality, aged Brie cheese.
  • If your puff pastry is very soft, chill it for 30 minutes before rolling to prevent sticking and ensure easy handling.
  • Leftover Cranberry Brie en Croute can be stored in the refrigerator for up to 2 days; reheat gently in a low oven before serving.
