Citrus Candied Nuts

Description

Candied citrus nuts have a bright fresh flavor with a sweet crunch, they are great to eat alone or put in a a salad, or on cakes.


Ingredients

Scale
  • 1 1/2 cup or 348 g.sugar
  • 4 T. or 73 g.orange juice
  • 1 T. corn syrup
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground all spice
  • zest of 2 good size lemons
  • 2 drops tangerine oil (optional)
  • 3 cups or 329 g.whole unsalted walnuts toast light if desired

Instructions

  1. In medium size heavy saucepan put sugar, orange juice and corn syrup in. Turn heat on to medium high and stir well. Put a candy thermometer in and let the mixture come to 240-45 degrees Fahrenheit.
  2. When the sugar mixture reaches the right temperature take off heat and stir in the the remainder ingredients. Make sure all the ingredients are stirred well then pour onto a foil lined cookie sheet light sprayed with cooking spray. Let cool completely and break into pieces. Store in tightly sealed container.
