- 12 Habanero peppers
- 1/2 pound (227 g) ground turkey
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 3–4 Chipotle peppers in Adobo Sauce, finely chopped
- 3–4 tablespoons Adobo sauce
- 4 tablespoons shredded cheddar cheese
- 1/2 avocado, mashed
- Juice of 1/2 lime
- Salt and pepper, to taste
- Sriracha sauce, for drizzling
- Fresh cilantro, chopped, for garnish
- Olive oil, for cooking and brushing
Instructions
Preparations:
- Preheat Oven: Set your oven to preheat at 375°F (190°C).
- Prepare Vegetables and Turkey:
- Sauté Aromatics: In a skillet over medium heat, add a drizzle of olive oil, then sauté chopped onions and garlic until translucent, about 5 minutes.
- Cook Turkey: Add ground turkey to the skillet, breaking it up as it cooks until fully browned.
- Add Chipotle and Adobo: Stir in the chopped chipotle peppers and adobo sauce. Continue cooking until the mixture is well-combined and most of the liquid has evaporated. Season with a pinch of salt and pepper.
- Prepare Habaneros:
- Slice and Deseed: Wearing gloves, slice the tops off the habaneros and carefully remove the seeds and membranes.
- Stuff Peppers: Place a small amount of shredded cheddar cheese in each pepper, followed by the chipotle turkey mixture. Gently press to compact the filling.
- Oil and Bake: Arrange the stuffed peppers on a baking tray. Lightly brush each with olive oil. Bake in the preheated oven for 10 minutes or until the peppers are tender.
Assembling:
- Make Avocado Lime Mash: In a small bowl, combine mashed avocado with lime juice, salt, and pepper.
- Garnish and Serve:
- Add Toppings: Top each baked habanero with a dollop of avocado lime mash.
- Drizzle: Lightly drizzle with Sriracha sauce for an extra kick.
- Garnish: Sprinkle chopped cilantro over the peppers to finish.
