- 8 slices (8 slices) bread
- 4 (4) eggs
- 1/2 cups (118 ml) milk
- 4 slices (4 slices) leftover or rotisserie chicken
- 8 slices (8 slices) bacon
- 4 slices (4 slices) Swiss cheese
- 1 tbsp Oscar Relish
Instructions
- Heat a large frying pan or griddle with a spray of nonstick spray and a tablespoon of butter, margarine, or oil over medium heat.
- Whisk eggs and milk together. Dip bread in the egg/milk mixture to coat both sides.
- Place coated bread in the frying pan; don’t crowd. Brown the first side of the bread, then flip.
- Build the sandwiches in the pan: add cheese first, then chicken and bacon. Top with the browned side of another piece of bread.
- Once the bottom of the sandwich is browned, flip over the whole sandwich to brown the last side. Cover so that the cheese can melt.
Notes
- For easier flipping, use a large spatula and work quickly once the sandwiches are assembled.
- To prevent soggy bread, ensure the chicken is well-drained before adding to the sandwich.
- Leftover sandwiches can be reheated in a toaster oven or skillet until cheese is melted and bread is crispy.
