Description

A twist on the classic Monte Cristo, this savory sandwich features crispy bacon, melty Swiss, and juicy chicken. Perfect for brunch or a quick weeknight meal!


Ingredients

  • 8 slices (8 slices) bread
  • 4 (4) eggs
  • 1/2 cups (118 ml) milk
  • 4 slices (4 slices) leftover or rotisserie chicken
  • 8 slices (8 slices) bacon
  • 4 slices (4 slices) Swiss cheese
  • 1 tbsp Oscar Relish

Instructions

  1. Heat a large frying pan or griddle with a spray of nonstick spray and a tablespoon of butter, margarine, or oil over medium heat.
  2. Whisk eggs and milk together. Dip bread in the egg/milk mixture to coat both sides.
  3. Place coated bread in the frying pan; don’t crowd. Brown the first side of the bread, then flip.
  4. Build the sandwiches in the pan: add cheese first, then chicken and bacon. Top with the browned side of another piece of bread.
  5. Once the bottom of the sandwich is browned, flip over the whole sandwich to brown the last side. Cover so that the cheese can melt.

Notes

  • For easier flipping, use a large spatula and work quickly once the sandwiches are assembled.
  • To prevent soggy bread, ensure the chicken is well-drained before adding to the sandwich.
  • Leftover sandwiches can be reheated in a toaster oven or skillet until cheese is melted and bread is crispy.
